  1. Take a bowl mix flour,salt,ajwain,oil and mix it nicely. Now add little by little water and make a stiff dough and keep it for rest for 25 minutes by covering it with wet cloth..
  2. Now take a pan,add oil in it, heat it add hing,fennel seeds,coriander seeds,let them split and now add potatoes, salt, haldi, red chilli powder,garam masala and mix it nicely..
  3. Take out in a bowl and cool it. You can add kadhi patta,coriander leaves in it..
  4. Now from the dough take a ball and roll it round or oval shape and cut into halves. Put some water in the edges and fix it like a cone and fill in between it the potato filling and seal from the top with the help of water..
  5. Heat oil and deep fry the samosas..
