- For dough, add salt, ajwain and ghee to the maida flour and mix well till it holds shape. Now add water and knead a semi stiff dough. Cover and keep the dough aside for 15 minutes..
- For stuffing, boil raw banana and green peas and mash them. Further add salt, lemon juice, chopped coriander, ginger chilli paste..
- For tempering, heat oil, add urad dal, turmeric powder, hing,cumin seeds and curry leaves. Pour the tempering to the banana mixture and mix all the ingredients well..
- Now make medium sized balls from the dough and roll thin. Cut off the edges to make a square. Cut from the center and place 1 horizontal and 1 vertical..
- Fill stuffing in the center and fold 2 sides as shown in the picture and seal both the sides by pressing. Cut thin stripes on the remaining 2 sides..
- Fold the alternate stripes as shown to make the mat design. Press and seal the edges by applying water..
